Chicken Alfredo
Ingredients
4 boneless chicken breasts
2 cups heavy cream
1 cup low-sodium chicken broth
4 tablespoons (0.5 stick) unsalted butter
8 ounces cream cheese, cubed
0.5 teaspoon salt
0.5 teaspoon Italian seasoning
0.25 teaspoon ground pepper
0.25 teaspoon garlic powder
16 oz dry rigatoni pasta
4 oz shredded Parmesan cheese
Fresh parsley, chopped
Instructions
Add chicken, heavy cream, chicken broth, butter, cream cheese, salt, Italian seasoning, pepper, and garlic powder to Crockpot.
Cover and cook on Low for 3-4 hours or High for 2 hours.
Remove chicken and shred. Return to Crockpot and add pasta and Parmesan. Stir everything to combine. Cover again and cook on High for 30 minutes.
Remove lid and stir again. Garnish with parsley and additional Parmesan if desired.
Notes
Penne, ziti, or other pasta shapes can be substituted for rigatoni.
