Hoison Honey Chicken

Ingredients

  • 1 cup Jasmine rice

  • 12 oz fresh green beans, trimmed

  • 2 scallions

  • 4-6 teaspoons fresh grated ginger

  • 8 tablespoons (0.5 cup) hoisin sauce

  • 4 teaspoons honey

  • 2 teaspoons Sriracha sauce

  • 1.5-2 lbs boneless chicken breasts, sliced into thin strips

  • 1 tablespoon sesame seeds

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil and grease with cooking spray.

  2. In a small pot, combine rice, 1.5 cups water, and a large pinch of salt. Bring to a boil, then cover and reduce heat to low to simmer. Cook until rice is tender (15-18 minutes). Keep covered off heat until ready to serve.

  3. While rice cooks, toss green beans with a drizzle of oil salt, and pepper. Roast on top rack until golden brown and tender (12-15 minutes).

  4. While green beans cook, trim and thinly slice scallions, separating whites from greens. Peel and mince ginger.

  5. In a small bowl, combine hoisin, honey, Sriracha, and 3 tablespoons of water.

  6. Pat chicken dry and season with salt and pepper. Heat a large drizzle of oil in a large pan over medium-high heat. Add chicken and cook, stirring occasionally, until browned (3-5 minutes).

  7. Once chicken is browned, add scallion whites and ginger to pan and cook until fragrant (~1 minute).

  8. Pour in hoisin/Sriracha sauce and cook until sauce has thickened and chicken is coated and cooked through (2-3 minutes).

  9. Fluff rice with a fork and stir in 2 tablespoons of butter. Season with salt and pepper.

  10. Serve chicken atop rice with green beans on side. Garnish with scallion greens and sesame seeds.

Notes

  • 1-1.5 teaspoons of dried powdered ginger can be substituted for the fresh ginger.
