Parmesan Chicken
Ingredients
1 cup panko breadcrumbs
1 cup shredded Parmesan cheese
1 tablespoon smoked paprika
2 lbs boneless chicken cutlets
0.5 cup sour cream
Green onions
Cooking oil
Salt and pepper
Instructions
Preheat oven to 425°F. Line a baking sheet with aluminum foil and grease with cooking spray.
In a bowl, combine panko, Parmesan, paprika, a large drizzle of oil, and salt and pepper.
Pat chicken dry and season with salt and pepper. Place on baking sheet.
Spread tops of chicken with a thin layer of sour cream. Mound panko mixture on top, pressing to adhere.
Roast chicken in oven until cooked through (15-20 minutes) (165°F internal temperature).
Serve chicken with green onion garnish. Best served with mashed potatoes.
Notes
Chicken cutlets can be substituted with chicken breasts cut in half through the middle.
Sour cream is best applied with a pastry brush or similar.
