Parmesan Chicken

Ingredients

  • 1 cup panko breadcrumbs

  • 1 cup shredded Parmesan cheese

  • 1 tablespoon smoked paprika

  • 2 lbs boneless chicken cutlets

  • 0.5 cup sour cream

  • Green onions

  • Cooking oil

  • Salt and pepper

Instructions

  1. Preheat oven to 425°F. Line a baking sheet with aluminum foil and grease with cooking spray.

  2. In a bowl, combine panko, Parmesan, paprika, a large drizzle of oil, and salt and pepper.

  3. Pat chicken dry and season with salt and pepper. Place on baking sheet.

  4. Spread tops of chicken with a thin layer of sour cream. Mound panko mixture on top, pressing to adhere.

  5. Roast chicken in oven until cooked through (15-20 minutes) (165°F internal temperature).

  6. Serve chicken with green onion garnish. Best served with mashed potatoes.

Notes

  • Chicken cutlets can be substituted with chicken breasts cut in half through the middle.

  • Sour cream is best applied with a pastry brush or similar.
