Shredded Chicken

Ingredients

  • 4 boneless chicken breasts

  • Olive oil

  • Salt and pepper

  • 0.75 cup low sodium chicken broth

Instructions

  1. Heat olive oil in nonstick skillet on medium heat.

  2. Pat chicken dry and season with salt and pepper. Place chicken in skillet and cook for 5-6 minutes, then flip chicken with tongs.

  3. Add chicken broth to pan and cover skillet with lid and cook for 7-10 minutes (165°F internal temp).

  4. Remove chicken from pan and shred.

    1. Place chicken on cutting board and use two forks to pull apart.

    2. Place chicken in stand mixer and mix with paddle attachment on Speed 2 for 15 seconds.

Notes

  • Seasonings like thyme, oregano, etc can be added with the salt and pepper.

  • Do not over-shred chicken in stand mixer - it will get grainy.

  • Extra chicken broth can be used if desired.
