Meatloaf
Ingredients
3 shallots
1 lb ground beef
1 lb ground pork
0.75 cup panko breadcrumbs
1.5 teaspoon garlic powder
1.5 teaspoon thyme, stripped and finely chopped
0.75-1 cup low-sodium beef broth
0.5 cup sour cream
Instructions
Preheat oven to 425°F. Line a baking sheet with aluminum foil and grease with cooking spray.
Halve and peel shallots. Finely chop one half and finely mince remaining half.
Combine beef, pork, breadcrumbs, minced shallot, garlic powder, and 3 tablespoons water in a bowl. Season with salt and pepper.
Form mixture into 4-6 loaves. Place on baking sheet and cook in oven for 15-20 minutes (internal temperature of 160°F).
While meatloaves cook, strip thyme leaves from stems and finely chop until it measures 1-1.5 teaspoons.
Heat a drizzle of oil in a skillet over medium-high heat. Add chopped thyme and sliced shallot. Season with salt and pepper. Cook, stirring, until softened (2-4 minutes).
Stir in beef broth and bring to a boil, then reduce to a low simmer. Cook until slightly thickened (2-3 minutes).
Turn off heat and stir in sour cream and 2 tablespoons butter until melted and combined. Season with salt and pepper. If necessary, sauce can be reheated for serving over low heat.
Spoon sauce over meatloaves for serving. Serve with mashed potatoes.
Notes
A mix of roasting herbs (thyme, rosemary, sage, etc) can be substituted for thyme.
