One Pot Cheesy Chicken

Ingredients

  • 3-4 boneless chicken breasts cut into small pieces

  • Olive oil

  • Salt and pepper

  • 1 cup uncooked basmati or long grain rice

  • 2.5 cups low sodium chicken broth

  • 12 oz frozen steamable broccoli (or other vegetable)

  • 2 cups shredded cheddar or colby jack cheese

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken to skillet and season with salt and pepper. Cook for 4-6 minutes, stirring frequently, until chicken is no longer pink in the middle. Drain excess liquid and oil.

  2. Add rice and chicken broth to skillet with chicken. Cover and bring to a boil. Once boiling, reduce heat to medium-low. Simmer for 15 minutes or until liquid is absorbed.

  3. While rice and chicken are simmering, cook frozen vegetables per package instructions and shred cheese.

  4. When rice and chicken are finished cooking, stir in frozen vegetables and 1 cup shredded cheese. Stir until cheese is melted.

  5. Top with remaining 1 cup shredded cheese and cover with lid for 2-3 minutes to allow cheese to melt.

Notes

  • Shredded chicken can be substituted for sliced chicken.

  • Frozen mixed vegetables are a good substitute for broccoli.

  • Colby jack cheese has worked out better than cheddar.
